FILIPINO WORLD-CLASS FOOD BOOK LAUNCHED

Marx Canoy’s ‘FOOD FEAST: Traditional to World-Class Philippine Cuisine’ was launched by the Alliance of Philippine Community Organizations, Inc ( APCO) as part of the celebration of the 114th declaration of Philippine Independence this year.  Held at Bankstown Sports Club on 9 June 2012, the cookbook that features many of the classical Filipino national and regional favourites in a very classy western presentation was formally launched and attended by some national , state, community and industry personalities led by the Federal Minister for Multicultural Affairs and Minister for Sports, the Senator Kate Lundy who delivered an inspirational speech, Federal MP for Werriwa, the Hon Laurie Ferguson, NSW State MPs Bryan Doyle, Kevin Connolly and Tanya Davis, James Mussak, author and publisher of ‘The Great Chefs of Australia’ book series and Consul General for Sydney, Anne Jalando-on Louis.

Marx Canoy’s cookbook is a collaborative project of the community - authored by Marx Canoy, edited by Michelle Balthazar, concept and design by Albert Prias, Graphic Design, Production and Layout by Millie Marcial-Phillips of Ang Kalatas Newspaper and proudly supported by the Alliance of Philippine Community Organisations, Inc (APCO).  Some prominent members of the community also contributed with their unique recipes such as Bibingka Royale of APCO founder and People of Australia Ambassador Dr Cen Amores, Sputnik of Ang Kalatas publisher Millie Marcial-Phillips and  Beef Tocino ala Carte of poet Violy Miguel.

The 250-page book contains some more than 150 mouth-watering recipes grouped into 9 main food categories, ie: soup, seafood, noodles and pasta, meat, pizza, sandwiches and burgers, desserts, snacks  and healthy choices plus 60 condiments and sauces , 10 guest recipes and 15 requested recipes. Each recipe is clearly presented in colours, with the ingredients and method of preparation including substitutes or alternatives and tips. There are also culinary tips, hints and various methods of cooking fish and other seafood; various cuts of beef, pork and chicken; glossary of Filipino and English cooking terms; step-by- step and illustrated preparation of dough and pastry; and measuring tables, conversions and equivalents.  Whether you are a food connoisseur or a neophyte home cook, this book is an excellent cooking reference covering plain cooking of lechon de leche to complex Frenchy ones.

Marx came to Australia as a boxer but his love for cooking changed the course of his life which ultimately made him a professional chef. ‘Para sa aking mga kababayan’, Marx emphatically made clear when asked to whom he dedicated his cookbook.  Besides his passion for cooking, Marx heart also beats for a genuine community service as shown in his active involvement with APCO as one of its directors. He remains very approachable and friendly and whenever possible goes back to his Visayan island motherland to teach communities how to cook healthy yet simple food.
